Cooling units include a gravity device and a ventilation system. The climate control cycle starts with a cooling period during which the temperature inside the cabinet is brought down to the desired level. As a result, condensation forms on a humid plate located inside the cabinet. Once the desired temperature is reached, the unit cycles off and the evaporation of the condensate begins. Excess humidity is eliminated through an evaporation drain located at the back. The cycle then repeats itself. All wine cellars come with digital thermostats specially designed to maintain a temperature ranging from 7°C to 17°C (43°F to 63°F).
